This easy, delicious, moist carrot cake tray bake is gently spiced and flavoured with walnuts and grated carrots, and topped with a delicious cream cheese icing!

Whisk together the dry ingredients & walnuts.

Beat eggs and sugar, then add in the oil & butter & carrots.

mix in the dry ingredients.

Pour into prepared baking tin and bake at 170°C/340F for 30 to 40 mins.

Make the frosting by beating cream cheese and butter until light and fluffy before adding in icing sugar & Lemon.

Top the cake with the frosting. Sprinkle with walnuts. Slice, serve & enjoy!
