This super easy, delicious, moist chocolate tray bake consists of a soft chocolate sponge that is topped with a whipped milk chocolate ganache.
2 - Whisk the flour, baking powder and salt together. Set aside.
1 - Mix the milk, vanilla and coffee together. Set aside.
3 - Beat the eggs and sugar together until the eggs are light, fluffy and doubled in size.
4 - Add in the melted butter and milk with the beaters running.
5 - Sift in the cocoa. Add in the flour and whisk until just combined.
6 - Pour into a 9"x13" cake tin. Bake at 170°C/340F for 25-30 minutes.
7 - Heat the cream. Add in the blocks of chocolate. Rest for 5 mins. Stir until the ganache is smooth and shiny.
8 - Whip the set ganache with a hand mixer.
9 - Smooth the ganache over the cake and create swirls for a rustic feel.
