These easy, delicious, spicy ginger biscuits are super simple to make, a little crisp on the outside and a bit chewy in the middle. The perfect ginger cookies to dunk into your afternoon cuppa!
Cream the butter and sugar. Mix in the eggs and golden syrup.
Add the egg and vanilla, cream together.
Mix in dry ingredients to form a soft ginger biscuit dough.
Roll our 2tbsp of biscuit dough, roll in a ginger-sugar mix and bake.
Allow to cool completely before serving.
