Hot Cross Buns

These traditional soft, hot cross buns are filled with a delicious mix of warm spices and delicious mix of raisins and mixed peel. Best served warm with a smattering of butter.

INGREDIENTS

Step 1 - Knead together the bread flour, yeast, spices, salt, milk, egg, sugar, vanilla, and zest until the dough passed the "window pane" test.

Step 2 - Add the fruit to the dough and knead in until combined. Place the dough in an oiled bowl and allow to proof for 1 - 1.5 hours.

Step 3 - Once the dough is proofed, divide into 12 equal pieces (100 grams each) and roll into tight balls.

Step 4 - Make the cross paste by mixing together the flour, icing sugar and milk. Pipe over the tops of the shaped rolls. Bake at 200°C/390F for 15 to 20 minutes.

Step 5 - Glaze the tops of the rolls with golden syrup or apricot jam mixed with some boiling water. Allow to cool slightly before serving.

Step 6 - Serve warm hot cross buns with a smattering of butter and a cup of tea!
