Hot Cross Buns

These traditional soft, hot cross buns are filled with a delicious mix of warm spices and delicious mix of raisins and mixed peel. Best served warm with a smattering of butter.

INGREDIENTS

Knead together the bread flour, yeast, spices, salt, milk, egg, sugar, vanilla, and zest until the dough passed the "window pane" test.

Add the fruit to the dough and knead in until combined. Place the dough in an oiled bowl and allow to proof for 1 - 1.5 hours.

Once the dough is proofed, divide into 12 equal pieces (100 grams each) and roll into tight balls.

Make the cross paste by mixing together the flour, icing sugar and milk. Pipe over the tops of the shaped rolls. Bake at 200°C/390F for 15 to 20 minutes.

Glaze the tops of the rolls with golden syrup or apricot jam mixed with some boiling water. Allow to cool slightly before serving.

Serve warm hot cross buns with a smattering of butter and a cup of tea!
