Lemon Biscotti


This easy lemon biscotti recipe comes together in a matter of minutes and is flavored with fresh lemon juice and lemon zest, and topped with a sweet lemon glaze. Enjoy these crunchy lemon biscotti with a cup of tea or coffee.


1 - Start by rubbing the lemon zest into the sugar.

2 - Cream in the butter, then mix in the eggs, vanilla and lemon juice.

3 - Mix in the flour, almonds, baking powder, and salt.

4 - Divide the dough into two, and then roll into a log and bake for 30 minutes.

5 - Slice the cooled biscotti and bake for a second time.

6 - Drizzle with a lemon glaze made from combining icing sugar and lemon juice.
