Raspberry White Chocolate Loaf

This quick, easy, moist and super delicious raspberry and white chocolate loaf cake is the cake to bake this spring! This loaf is dotted with raspberries and every so slightly caramelised chunk of white chocolate!

Ingredients

Beat the eggs and sugar until light and fluffy. Add in the cooled melted butter, milk and vanilla.

Add in the flour, baking powder and salt and mix to a smooth batter.

Toss raspberries and chocolate in cornstarch and gently fold through the batter.

Place batter in a loaf tin. Toss some berries over the top and sprinkle with sugar. Bake at 170°C/340F for 45-55 minutes.

Allow the cake to cool completely before slicing and serving!
