Rich Fruit Cake

This particular fruit cake is a variation of the British traditional fruit cake served over Christmas or at weddings.

Day 1

SLice dates, apricots, and cherries. Mix all fruit together in a large bowl. Soak with brandy for 24 hours. 

Day 2

Make the fruit cake batter. Stir through the fruit.

Smooth the batter into a well-lined cake tin and bake at 150°C/300F FOR 2-3 HOURS.

Once the cake has cooled, pour a 1/4 of the brandy over the top of the cake. Allow to soak in. Flip the cake over and pour in the rest of the brandy. Seal in an airtight container, allow to mature for 2-4 weeks.

Week 2-4

Remove the cake from the tin. Slice and serve.  pairs really well with a delicious custard!
