Mealie Bread

(Cornbread made with creamed corn)

This South African cornbread is quick, easy, delicious, and made with creamed corn.

You will need:

Step 1 - Combine all the dry ingredients in a large bowl and whisk together.

Step 2 - Toss in the wet ingredients and mix until just combined.

Step 3 - Scoop into a lined loaf tin and bake at 180°C/355°F for 45 to 55 minutes.

Pro Tip - to help the bread split open in the middle during baking (which also allows the bread to rise), place either a thin band of melted butter or cut thin 2mm x 2mm strips of butter and place in the center of the bread.

Serve this bread at a braai (or barbeque) or simply enjoy it by itself with honey and butter.
