This easy fresh summer tomato galette is perfect as a main or a side dish!

Gather the ingredients.

Make the homemade flakey pastry. Wrap in cling film and refrigerate for 2 hours to overnight.

Drain excess moisture from the fresh tomatoes.

Roll out the pastry. Layer with cheese and tomatos.

Fold over the edges. Brush with an egg wash. Bake for 35 minutes at 200°C/400°F.

Allow to cool. Slice and serve!
