Gather the ingredients.

Rub the lemon zest into the sugar. Set aside.

Rub the butter into the flour, baking powder and salt.

Add the sugar, poppy seeds, cream, and vanilla. Stir until most of the flour seems moist.

Turn out onto surface. Bring the dough together. Laminate 2 x, then cut into wedges and bake.

Drizzle a sweet lemon glaze over the scones.

The dough may seem dry at first. But keep on lifting the edges with a bench scraper and folding over. It will become cohesive. Alternatively for more muffin like scones, increase cream to 2/3 cup.
